Meet Librae Bakery, a “third culture” bakery created by Dona Murad Gerschel. The bakery, which was dubbed New York City’s first Bahraini-owned bakery, is known for their Middle East-inspired flavors, which constitute the many distinct tastes that are now signature to their selection, as well as the Danish technique that shows skillfully with every piece.
One of their bestsellers, the Pistachio Rose Croissant, is an absolute fan favorite—not only does it look incredibly camera-worthy, but it’s also true to its promise of taking your tastebuds to a whole ‘nother level.

Tell us a bit about your brand!
Located at 35 Cooper Square in the East Village, Librae Bakery is a Third Culture Bakery influenced by flavors from the Middle East using fermentation techniques from Copenhagen. Founded by Dona Murad Gerschel, Librae is proud to be the first Bahraini female-owned bakery in New York City.
Dona's passion for her heritage creates an intersection of flavors, showcasing the rich diversity of Bahrain and the surrounding region in its pastries and baked goods offerings. Librae is a labor of love that extends from every corner of its cozy space to the intricate layers of its pastries. The bakery's aesthetic mirrors warmth and vibrancy with visuals that incorporate neutral tones and illustrative graphic-heavy designs.
Tell us about the design for your packaging and how you’re using them?
The packaging at root is vibrant, thoughtful and playful. Investing in premium packaging is just as much a part of the guest experience as their first bite. We worked with our amazing team of young female designers that spoke to our identity.
